Top Aussie chef in Dubai

Tony Bilson ... Wizard of Oz

The newly-opened Palm Grill restaurant at the InterContinental Dubai will host Australian celebrity chef Tony Bilson from May 4 to 13. Bilson will lead the restaurant’s kitchen with his famous cooking demonstrations for the best of Australian Prime Beef and Lamb as part of an Australian Meat promotion.

Bilson’s first restaurant was La Pomme D’Or (The Golden Apple) which he bought from a French couple in Melbourne. There he broke the mould of serving traditional counter meals and instead served ‘pot au feu’ of veal shanks and other French-inspired dishes. He moved on to other successful eateries, including Tony’s Bon Gout, 35 restaurants in NSW government buildings, the Mint Café and Bilson’s in east Circular Quay.
Tony said he learnt everything he knows about cooking from his mum and by reading cook books.
Top Australian winemaker from Scotchmans Hill, Andy Brown, will be at the promotion with the best in Australian wines. The 80-seat restaurant and bar is situated on the second floor of the hotel.
