Italian born Corrado Pani has become executive chef at the Grand Millennium Dubai, joining the hotel from the Ritz Carlton Dubai. Originally from Sardinia, Chef Pani graduated with a culinary diploma from the Hotel Management School in Alghero in Italy, following which he began his career as a commis chef at the Sheraton Porto Cervo.

He spent several years at sea aboard cruise lines, working for Celebrity, Royal Princess and Costa in areas as diverse as South America, Scandinavia, the Caribbean, North America and the Mediterranean.

On land, he gained further experience at the Forte Village Resort and the Grosvenor House in London, later opening his own Deco restaurant in Sardinia prior to moving to the Middle East to take up the post of head chef at the Beach Rotana Hotel & Towers in Abu Dhabi in 2002. His move to Dubai came with the opportunity to become executive head chef at Le Meridien Mina Seyahi, where he supervised the opening of Bussola, later relaunching the restaurant when it came under the auspices of the new Westin hotel.
