Chef Simon Barber takes over the reigns at La Baie as Chef de Cuisine, and is all set for a new season of dining at The Ritz-Carlton, Dubai.
Chef Simon introduces a host of modern techniques to the kitchen, using local products to bring fresh crisp flavour to your taste buds during the hot summer months. His philosophy on food is that a guest should be allowed to appreciate the natural look of a product; garnishes and decorative sauces are therefore kept to a minimum.
Born and educated in Manchester, Chef Simon worked extensively within England and spent a year in the South of France in Cannes at the Noga Hilton. He was also part of the opening teams of The Ritz-Carlton, Doha and The Ritz-Carlton, Bahrain.
